The position leads the Culinary Team in the Chef's absence. Responsibilities include:

  • Providing guidance to kitchen staff members, including cooking, food preparation, and meal plating.
  • Ensuring a first-in, first-out food rotation system and verifying that all food products are properly dated and organized for consistent quality on a daily basis.
  • Following all recipes and maintaining all food temperature logs daily.
  • Managing food and product ordering and food waste control by working with policy and procedures that are in place.
  • Verifying that all storage units, cold or dry, meet standards daily.
  • Maintaining all sanitation standards that are in effect under State and Local and USA Health guidelines.

Qualifications include a high school diploma or equivalent and two years of practical and managerial experience in a volume food operation setting. Servsafe Certification is required.
