As a Culinary leader, you will lead the culinary team to consistently execute at a high level, develop, and implement creative menus for outlets and catering focusing on driving revenues. You will use local and seasonal inspired items when appropriate and create thoughtful presentations showcasing foods. Your responsibilities will include:

  • Developing and mentoring the kitchen team.
  • Overseeing all kitchen operations including procurement, production, preparation, and presentation.
  • Developing recipes, cost controls, plating specifications, and production schedules.
  • Ensuring a safe and sanitary work environment that conforms to all standards and regulations.
  • Consistently offering professional, engaging, and friendly service.
  • Overseeing daily operations of the Kitchen department, including Banquets, Outlets, In Room Dining, and more.
  • Maintaining food and beverage standards using standardized food recipes and safe food handling practices.
  • Preparing weekly schedules and ensuring productivity levels are maximized.
  • Responsible for maintaining staffing levels through proactive recruiting.
  • Ensuring performance management and colleague training/development occurs in a timely manner.
  • Participating in the development and implementation of kitchen & restaurant capital projects.
  • Promoting teamwork within the Kitchen department and maintaining strong working relationships with all supporting departments.
  • Ensuring all municipal and state laws regarding hygiene and security are respected.
  • Responding to food-related feedback and ensuring proper processes are produced.
  • Ensuring all kitchen equipment is in good working order.

This position requires active involvement in the hotel's Department Head and Food & Beverage meetings, holding regular departmental communication meetings, and supporting participation of colleagues in various hotel committees.

Physical Demands: Ability to stand, walk and/or sit and continuously perform essential job functions for an eight-plus hour shift. Frequent twisting, bending, stooping, reaching, standing, walking, talking, hearing, seeing, and smiling.
