Communicates effectively with Chef. Takes physical inventory of specified food items for daily inventory. Ensures that each Kitchen work area is stocked with specified tools, supplies, and equipment to meet the business demand. Ensures that recipe cards, production schedules, plating guides, and photographs are current, posted, and followed. Prepares menu items following recipes and yield guides, according to department standards. Maintains complete knowledge of and complies with all departmental policies, procedures, and standards. Maintains complete knowledge of correct maintenance and use of equipment. Anticipates guests’ needs, responds promptly, and acknowledges all guests, however busy and whatever time of day. Maintains positive guest and colleague relations at all times. Monitors and maintains cleanliness, sanitation, and organization of assigned work areas. Reviews daily specials and offers feedback to Executive Chef. Communicates additions or changes to the assignments as they arise throughout the shift. Reviews the day’s supplies and ensures that they are received and stored correctly. Follows hotel break policy and grooming and attire guidelines. Checks and ensures that all opening/closing duties are completed to standard. Checks kitchen printers on the line, ensuring they are in working order and there is enough paper available for the shift. Works on the line during service and assists wherever needed. Is aware of any shortages and communicates with Chef before the item runs out. Inspects the cleanliness of the line, floor, and all Kitchen stations. Maintains proper storage procedures as specified by Health Department and Hotel requirements. Communicates needed work orders for maintenance repairs to Chef.
