Job Description

As part of our kitchen team, you will produce all hot and cold food items for service in the restaurant and catering functions, ensuring that all are prepared according to Fairmont Grand Del Mar standards and specifications. Your responsibilities will include:

  • Maintaining control charts of all food items produced.
  • Ensuring a high degree of cleanliness throughout the cooking area.
  • Preparing food of consistent quality following Fairmont Grand Del Mar standards.
  • Dating all food containers and rotating per Standard Operating Procedures (SOP).
  • Practicing safety standards at all times.
  • Cooking orders as requested, including special requests.
  • Starting food items that are prepared ahead of time to avoid over-preparation.
  • Controlling food waste, loss, and usage per SOP.
  • Assisting in setting up plans and actions to correct any food cost problems.
  • Checking pars for shift use and determining necessary preparation.
  • Assisting in keeping the buffet stocked.
  • Returning all food items not used to designated storage areas.

Each associate is expected to carry out, within their capabilities, all reasonable requests by management.

  • Ability to verbally communicate effectively with guests and co-workers.
  • Experience in various cooking stations (carving, pasta, omelet, stir fry).
  • Ability to work all banquet functions.
  • Skills in cutting, trimming, and boning meat.
  • Ability to wash, peel, cut, and shred fruits and vegetables.
  • Proficiency in baking, broiling, sautéing, and steaming foods.
  • Basic English communication skills.
  • Food Handler Card.
