Job Description

The Executive Kitchen Steward manages the stewarding function in all kitchen areas to promote overall cleanliness, sanitation, and compliance with state and local health regulations. Management-level associates are expected to work as much of each workday as is necessary to complete their job responsibilities; for OEM associates, overtime does apply and is calculated accordingly.

Responsibilities include:

  • Controlling and analyzing cost breakage and quality support provided to outlets, banquets, and other areas of china, glass, and silver.
  • Assisting the Executive Chef in maintaining culinary supplies.
  • Monitoring condition and cleanliness of equipment and all kitchen areas.
  • Recommending cleaning projects to the Outlets Manager.
  • Participating in the preparation of the annual stewarding operating budget which supports the overall objectives of the Food & Beverage Department.
  • Educating associates on current safety issues to ensure compliance with all health and safety regulations.
  • Informed management of hazardous situations, emergencies, or threats to security of guests, employees, or hotel assets.
  • Determining the minimum and maximum stock and controlling the par stocks of all materials and equipment.
  • Ensuring all Stewarding personnel fulfill their job functions appropriately.
  • Maintaining costs by minimizing breakage loss and excessive chemical usage.
  • Conducting and attending meetings as necessary.
  • Assisting with other duties as needed, which may include providing assistance with food dish-up and completing set-up sheets.

Skills Required extracted by

  • High School Diploma or equivalent.
  • At least 2 years of experience in stewarding, kitchen maintenance, or kitchen operations.
  • At least one year of supervisory experience.
  • Knowledge of food and beverage service operation preferred.
  • Compliance with certification requirements, including Food Handlers, Alcohol Awareness, CPR, and First Aid.
  • Ability to lead, supervise, and direct the Stewarding department.
