With unprecedented access, PS has the only private partnership with both TSA and Customs and Border Protection, allowing our guests to move seamlessly through arrivals and departures. A team of expert Agents works behind the scenes to choreograph every step of the pre- or post-flight experience. Sail through our private, line-free TSA screening, access dedicated customs and immigration services on arrival, and relax as our trained drivers escort you across the airfield directly to/from your aircraft. All without stepping inside the airport. Guests also enjoy private suites, chef-prepared food, spa services, and more, all while our Control Room coordinates with government, security, and airline officials to ensure the utmost efficiency, safety, and privacy.

The Role: Pastry Chef. The Pastry Chef is responsible for overseeing the Pastry Department at PS LAX. The Pastry Chef demonstrates strong leadership qualities with attention to detail in elevating and sustaining the highest of culinary products. They will be accountable for the quality and consistency of the pastry products produced and served, the efficiencies, policies, procedures, training, and accountability of costs associated with the department. The Pastry Chef will work directly with the Executive Chef on the creation, development, and implementation of new desserts and creative menu additions.

Responsibilities & Expectations:

  • Prepare a wide variety of goods such as cakes, cookies, pies, breads, etc. following traditional and modern recipes for both menu and surprise & delight moments.
  • Works directly with Executive Chef on the creation, development, and implementation of new desserts and creative menu development.
  • Supervises the preparation and production of all baked goods.
  • Inspect the quality of all ingredients and measure them for specific recipes.
  • Records inventory of supplies and orders stock from main storeroom; estimates daily and weekly inventory needs and replenishes items appropriately.
  • Check quality of material and condition of equipment and devices used for cooking, meeting all department requirements.
  • Analyzes food costs and determines most cost-effective recipes while maintaining quality.
  • Identify staffing needs when applicable and support in recruitment and train personnel.
  • Provides training and guidance to pastry staff forming related work.
  • Directs and/or arranges for the maintenance and care of department facilities, equipment, supplies, and materials in a manner which promotes efficiency, health, and safety.
  • Research and development of new products for the continual growth of our Pastry department.
  • Performs other duties as assigned to meet business needs.

Qualifications:

  • Minimum 5 years of prior experience as a Pastry Chef.
  • Minimum 2 years of fine dining food service experience.
  • In-depth knowledge of sanitation principles, food preparation, baking techniques, and nutrition.
  • Passionate about culinary and pastry arts with knowledge of a multitude of ingredients and recipes.
  • Must be able to perform in a fast-paced environment.
  • Precise eye for detail.
  • Ability to prepare routine administrative paperwork.
  • Ability to read, understand, follow, and enforce safety procedures.
  • Excellent verbal and written communication skills.
  • Strong multitasking and organizational skills.
  • Physically able to stand and move around for long periods of time.
  • Must be able to comfortably and frequently lift upwards of 20-50 pounds.
  • Pass a pre-employment drug screening + background check.
  • Collection of SSN as part of the background check process will be required.
  • Minimum education requirement of High school Diploma/GED.
  • Must be authorized to work in the United States.
  • PS is a 24-hour facility and as such we require fully open schedule availability and flexibility for all positions within our operations departments, including weekends, holidays, and early morning/late evening shifts.

This is a full-time, exempt role. Salary $72,000/annually.
