Rate of Pay: $70,000 - $85,000 Annual Salary

What You Will Be Doing:

  • Ensure the correct preparation and presentation of food items.
  • Plan and develop menus considering product availability, service cost, and number to be served.
  • Establish and maintain appropriate food portions in accordance with pricing policy.
  • Assign prices for food items to ensure net profit for the food cost area.
  • Prepare and post employee work schedules reflecting operating forecasts.
  • Supervise all methods of food preparation and cooking methods.
  • Coordinate and supervise the ordering of food supplies and kitchen equipment.
  • Hire, train, discipline, supervise, and organize kitchen personnel.
  • Complete performance evaluations for all kitchen employees.
  • Hold regular meetings with kitchen staff and attend required meetings.
  • Maintain high levels of employee morale and motivation.
  • Coordinate with the Executive Chef and other departments for special functions.
  • Supervise the maintenance and cleanliness of food preparation equipment.
  • Develop and ensure a safe working environment.
  • Create proper purchasing specifications and monitor food presentations.
  • Communicate regularly with the Executive Chef regarding kitchen activities.
  • Monitor the employee cafeteria to ensure quality and variety.
  • Respond properly in any hotel emergency or safety situation.
  • Perform other tasks or projects as assigned by hotel management.

Qualifications:

  • Very advanced courses or experience in kitchen administration.
  • Must possess a high level of creativity and high quality standards.
