Job Description

We are looking for a candidate to work with other F&B managers and keep them informed of F&B issues as they arise. You will need to keep your immediate supervisor fully informed of all problems or matters requiring attention. Your responsibilities will include coordinating and monitoring all phases of Loss Prevention in kitchen areas, preparing and submitting required reports in a timely manner, and monitoring the quality of all food products and presentations.

As part of your role, you will ensure the preparation of required reports, including (but not limited to) Wage Progress, payroll, revenue, and employee schedules. You will oversee all aspects of the daily operation of the kitchen and food production areas, including hot food from the main kitchen and bakery, and cold food from the pantry. It is essential to make cooks aware of daily forecasts and customer counts to ensure that they can serve both hot and cold food on time.

You will also respond to guest complaints in a timely manner, ensure compliance with SOPs in all outlets, and enforce requisition procedures. Conducting staff performance reviews in accordance with Highgate Hotel standards is another key responsibility. You will need to understand, implement, and monitor corporate promotions in outlets, including buffet and three-meal concept standards, as well as know and enforce all local health department sanitation laws.

Your daily tasks will include checking all stations at the end of every shift for proper food storage and sanitation, checking food purchases for proper ordering, quality, and price structure, and overseeing daily activities such as preparation for all food items, sanitation of the outlets, and receiving daily inventories.

Additionally, you will prepare daily food production sheets and cut meat, poultry, and seafood according to daily business needs.

The ideal candidate for this position should have a warm and friendly demeanor, effective communication skills, and the ability to multitask and prioritize tasks to meet deadlines. You must maintain high standards of personal appearance and grooming, comply with Highgate Hotel Standards, and maximize efforts towards productivity.

  • At least 4 years of related progressive experience or a culinary graduate with at least 2 years of progressive experience.

  • Effective problem-solving skills and ability to handle complex information.
  • Knowledge of French culinary skills/techniques is a plus.
