Job Description

The University of California, Merced is seeking a Chef 2 who participates in coordinating production activities, assigning work, and training employees on proper food preparation techniques. This role requires expertise in all phases of food preparation and the use of kitchen equipment. You will assume a leadership role in the kitchen by organizing and directing the production staff while demonstrating good judgment in selecting quality assurance methods and techniques for obtaining solutions.

The Chef 2 is responsible for assisting the Executive Chef in daily management and supervision of the Dining Services team. Key responsibilities include:

  • Providing a quality dining experience by establishing high standards for the delivery of food and excellent guest service.
  • Executing menu cycles and food programs for operations.
  • Assisting in the menu development process and refining recipes.
  • Preparing assigned menu items following departmental recipes in accordance with policies and procedures.
  • Ensuring proper handling and storage procedures are in place for all inventories of food supplies and equipment.
  • Developing menus that offer realistic variety while ensuring efficient and cost-effective production.
  • Participating in the planning and execution of operations.
  • Ensuring consistent and attractive presentation of food items for all operations.
  • Overseeing kitchen staff and ensuring adherence to food service health, safety, nutritional, and recipe policies.
  • Assisting the Executive Chef in implementing the departmental vision and goals.

This position requires a high school diploma and/or equivalent certification, along with a Bachelor's degree in Culinary Arts preferred. Candidates should have at least one year of related experience or five years of equivalent related experience/education/training, as well as a Serve Safe Certification.
