Job Description

Cook 2 - Experienced cook needed for a high-volume kitchen environment.

The Cook 2 level functions as an experienced cook, responsible for performing the full cooking process using the assigned recipes. This includes preparing and measuring ingredients; grilling, frying, broiling, baking, and sautéing; checking for the proper doneness and taste; adjusting seasoning and temperature for best results; and setting plate presentations. Full responsibility for all aspects of the cooking station in all location kitchens. The Cook 2 ensures that the cooking station and preparation area meet all sanitation guidelines and proper product rotation is implemented.

  • Set up and stock workstation with minimal supervision.
  • Execute menu items from start to finish, including ingredient preparation, butchery of proteins, cooking, and plating.
  • Work with seasonal ingredients.
  • Participate in the preparation and development of new menu items.
  • Perfect existing skills and learn new techniques and develop new skill sets.
  • Master more than one specific station, such as: Grill, Sautee, Fryer, or Garde Manger.
  • Maintain cleanliness of all Back of House (BOH) work areas, including refrigeration, cooking equipment, and prep areas.
  • Participate in regular and deep cleaning of BOH work areas, including refrigeration, cooking equipment, and prep areas.

Requirements:

  • High School Diploma or equivalent
  • Able to speak, comprehend, and understand English
  • Able to talk and hear directions in a loud kitchen environment
  • 2 years of related high-volume experience
  • A passion for food and the cooking position, exceptional work ethic, and dedication.
  • Dependability- job requires being reliable, responsible, and dependable, and fulfilling obligations.
  • Availability to work nights, weekends, and holidays
  • Team player
  • Strong task and time management abilities
  • Ability to stand for extended periods and lift 30+ lbs.
  • Maintaining composure, keeping emotions in check, controlling anger, and avoiding aggressive behavior, even in difficult situations.
