Your responsibilities will include preparing all items on the prep list following standard procedures or otherwise instructed by your supervisor. You must maintain high quality at all times, inspect all food products for quality, and check portion control, weights, and counts prior to functions. You will fire all food for service and serve on the line, maintain/check cooking times and temperatures, and follow all storage procedures when taking food out of the walk-in and returning food to the walk-in. Additionally, you must maintain cleanliness of your work area at all times, keeping the walk-in, prep area, and equipment up to Health Department and Pointe standards.
Basic math skills are needed to understand and implement recipes and measurements. Good eye/hand coordination is necessary to use all kitchen equipment, and sufficient manual dexterity is needed to operate knives, spatulas, tongs, etc. The position requires bending, continuous standing, pushing, pulling, carrying, and lifting up to 70 lbs. You must have prior experience in sautéing, broiling, and fry cooking and a working knowledge of sanitation standards. You will prepare all food items according to standard recipes and as specified on guest checks to ensure product consistency.
Tools and equipment you will use include cooking utensils, pots, pans, slicers, knives, VCM, robot coups, blenders, and burr mixers, along with ovens, grills, stoves, flat tops, and salamanders.
The working environment is the interior of the hotel, in restaurant and kitchen areas, with exposure to humidity, steam, and extreme temperatures. You will also be exposed to food and beverage hazardous cleaning chemicals, as well as food items and beverages.
Physical requirements include the ability to work for long periods on your feet and lift up to 50 lbs. You must be able to work under some extreme temperatures.
