As a culinary team member, you will be responsible for providing and maintaining high-quality standards and procedures in preparing and serving all banquet food. Your responsibilities will include:

  • Preparing all items on BEOs or cover sheets according to standard procedures or as instructed by a supervisor.
  • Maintaining high quality at all times.
  • Inspecting all food products for quality during production.
  • Checking portion control, weights, and counts prior to functions.
  • Firing all food in accordance with a 30-minute SOP.
  • Maintaining and checking cooking times and temperatures.
  • Following all storage procedures for food handling.
  • Maintaining cleanliness of the work area at all times.
  • Ensuring the walk-in, prep area, and equipment meet Health Department standards.
  • Preparing all items according to standardized recipes or specifications to ensure consistency.
  • Understanding and maintaining all standard recipes.
  • Supporting procedures for food and beverage portion and waste controls.

Qualifications for this position include:

  • Basic math skills for understanding and implementing recipes and measurements.
  • Good eye/hand coordination for using kitchen equipment.
  • Prior experience in sautéing, broiling, and fry cooking.
  • Working knowledge of sanitation standards.
  • Ability to work cohesively with the culinary staff as part of a team.
  • Support for procedures regarding food and beverage portion and waste controls.
  • Ability to maintain all coolers, freezers, prep areas, and equipment up to State of Florida Health Department codes.
  • Performing other duties as assigned to meet business needs.
