We are seeking a Sushi Cook to join our team at Raymond James Stadium, home to the Tampa Bay Buccaneers. Reporting to the Executive Chef, the Sushi Cook is responsible for the production of all assigned menu items, ensuring that they are being completed in an efficient and consistent manner while following Legends’ specifications, recipes, and technique and maintaining sanitation standards.
Primary Responsibilities:
- Follows Executive Chef, Sous Chefs, and/or Culinary Supervisors assignments for opening and closing procedures and food preparation.
- Prepares sushi items by complying with portion size, quality standards, departmental rules, policies, and procedures, ensuring teams are doing the same.
- Maintains HACCP standards ensuring a high-quality level of food, food temperatures, rotation of product, cleanliness, and sanitation standards.
- Maintains cleanliness of kitchen including walk-in coolers, dry storage, shelves, walls, floors, and drains.
- Ensures all food preparation equipment is clean and sanitized and that it is kept in a safe and operable condition; reports issues to Chefs.
- Identifies and stores all food items according to established standards.
- Participates as a team player with specific responsibilities related to preparation, excellent service, and delivery of product.
- Must maintain a pleasant attitude towards customers, co-workers, and management.
- Adheres to the Legends Uniform and Grooming guidelines.
- Other duties as assigned.
Requirements:
- Must be able to prepare a sushi platter on site, as part of the final stage of the interview process.
- Strong attention to detail.
- Elevated time management, organizational, and prioritizing skills.
- Excellent communication skills.
- Previous sushi preparation experience required.
- Strong knife skills and kitchen equipment knowledge.
- Must be able to obtain food safety certification.
- Able to be self-motivated and work independently or as a team player.
- Must have sufficient mobility to perform assigned production tasks including constant reaching, bending, stooping, wiping, pushing, and pulling for extended periods of time.
- Must have the ability to lift, push, and pull up to 50lbs.
- Must be able to stand or walk for long periods of time.
- Must be available for Stadium events.
- Must be able to work extended hours due to business requirements including late nights, weekends, and holidays.
- Follow and encourage your team to follow all safety policies and procedures, including but not limited to looking for and reporting any unsafe work conditions, and complete company-wide safety training and any additional job specific safety training.
