Reports to: Executive Chef/Sous Chefs

Line cooks are essential members of our team, and must possess a strong work ethic, a passion for food, and pride in their work. Experience in various food preparation techniques, solid knife skills, strong organization, and attention to cleanliness are crucial.

  • Maintain a clean and organized kitchen/station.
  • Report to work in a clean uniform, including chef coat and Merriman's cap.
  • Report to work on time and ready to perform duties.
  • Maintain a professional attitude at all times.
  • Follow rules and regulations posted in the company handbook.
  • Remain at your station throughout service.
  • Set up stations for service.
  • Follow food preparation par levels set forth by the business.
  • Ensure all food preparation is properly rotated and labeled.
  • Care for the freshness and proper handling of food ingredients.
  • Adhere to all recipe specifications.
  • Assist in immediately putting away food deliveries using FIFO (First-In, First-Out) principles.
  • Ensure hot food is served on hot plates, and cold food on cold plates.
  • Maintain timely service, adhering to company guidelines.
  • Confirm all food leaving the kitchen meets specifications, is flavorful, and presented attractively.
  • Prepare daily family meals that are flavorful and served on time.
  • Assist in removing trash to the dumpster.
  • Place all soiled linen (hand towels and aprons) in laundry bags.
  • Close the kitchen, including turning off equipment, restocking, and thorough cleaning.
  • Perform any other duties set forth or requested by the chef.

Personal Requirements:

  • Ability to stand and remain alert for extended periods.
  • Ability to lift up to 50 lbs. as needed.
