As an integral part of the kitchen team, the Baker will play a crucial role in exceeding guest expectations by creating and delivering exceptional service, along with preparing, baking, and finishing an array of baked goods to meet departmental standards. This includes breads, breakfast pastries, cookies, and other specified items.
- Essential Functions:
- Maintaining complete knowledge of and adherence to all departmental policies, service procedures, and standards.
- Correctly maintaining and using all kitchen equipment.
- Anticipating guest needs, responding promptly, and acknowledging all guests, regardless of time of day.
- Maintaining positive guest relations at all times.
- Demonstrating familiarity with hotel services, local attractions, and activities to provide accurate responses to guest inquiries.
- Effectively resolving guest complaints to ensure guest satisfaction.
- Maintaining the cleanliness, sanitation, and organization of assigned work areas.
- Adhering to State sanitation/Health regulations and Hotel requirements.
- Collaborating with the Pastry Chef/Sous Chef to review assignments, anticipated business levels, changes, and other information pertinent to job performance.
- Completing opening duties, including setting up workstations, inspecting tools and equipment, and checking the production schedule and pars.
- Preparing and producing breads and other designated items for Restaurants, Room Service, and Banquets, adhering to recipes and yield guides.
- Producing centerpieces for Banquets and Buffets, ensuring attractive and specified presentations.
- Preparing amenity orders for Room Service.
- Informing the Pastry Chef of any shortages or excess items, potentially applicable to daily specials.
- Assisting Pastry Cooks as needed to optimize guest service.
- Maintaining proper storage procedures as specified by Health Department and Hotel requirements.
- Minimizing waste and maintaining controls to attain forecasted food costs.
- Disinfecting and sanitizing cutting boards and worktables.
- Transporting empty, dirty pots and pans to the pot wash station.
- Directing and assisting Stewards in ensuring efficient cleanup processes.
- Completing closing duties, including returning food items to designated storage areas, rotating product, wrapping, covering, labeling, and dating items, straightening storage areas, cleaning prep areas, restocking items, and turning off equipment.
- Reviewing work status with the Pastry Chef before leaving.
- Assisting with daily checking of the bulletin board for daily and future functions which may need his/her attention. This includes banquet functions, room service pre-orders and contracted restaurant parties.
- Ensuring the proper presentation and preparation of all baked goods, including breakfast pastries, various rolls, and artisan breads.
- Providing Mis en place and production backup.
- Performing all other duties as required or assigned.
- Supervisory Requirements:
- Reports to: Executive Chef, Sous Chef, & Pastry Chef, Pastry Sous Chef, Assistant Pastry Chef

- Education/Experience:
- High school diploma or equivalent vocational training certificate.
- Minimum 6 years of experience in baking at a 4-star hotel or restaurant.
- LICENSES/CERTIFICATIONS:
- CPR Certification
- Food handling certificate
- Knowledge, Skills & Abilities:
- Ability to anticipate guest needs; respond promptly and acknowledge all guests.
- Ensure familiarity with all hotel services/features to respond to guest inquiries accurately.
- Highly organized, detail-oriented, and multi-tasking abilities.
- Maintaining positive guest relations at all times.
- Ability to expand/condense recipes.
- Comprehending and following recipes.
- Physical Demands:
- Ability to exert physical effort to transport up to 50 pounds.
- Ability to endure various physical movements throughout work areas.
- Ability to reach 7 feet.
- Maintain a stationary position for up to 8 hours throughout work shift.
