Pastry Cook 3 (Full-Time) at Alohilani Resort Waikiki Beach
Highgate Hotels, a premier real estate investment and hospitality management company, is seeking a highly motivated and skilled Pastry Cook 3 to join our team at the vibrant Alohilani Resort Waikiki Beach. This award-winning resort, designed by the Rockwell Group, offers a unique blend of indoor and outdoor luxury. Located in the heart of Waikiki, steps from Waikiki Beach, it is a tribute to Queen Lili‘uokalani, the last reigning monarch of the Hawaiian Kingdom. The resort boasts a spacious lobby, a captivating 280,000 gallon Oceanarium, and a soon-to-open destination pool deck with a saltwater infinity pool, shallow-water pool, and kids’ club.
Responsibilities
- Prepare, produce, and bake a wide range of pastries, breads, and other bakery items according to standardized recipes for Restaurants, Room Service, Employee Cafeteria, and Banquets.
- Maintain the highest standards of quality and presentation in all prepared products.
- Ensure cleanliness, sanitation, and safety in the kitchen and work areas, minimizing waste and maximizing cost/production efficiency.
- Assist higher level pastry cooks as needed.
- Maintain thorough knowledge of menus and preparation requirements in accordance with hotel standards.
- Maintain cleanliness and organization of all storage areas.
- Complete necessary food and station preparation prior to restaurant opening to ensure prompt and efficient service.
- Prepare and display buffet food items according to hotel standards.
- Demonstrate proficiency in baking, poaching, deep-frying, and par-cooking techniques.
- Prepare doughs, yeast products, Danish, croissants, buns, rolls, basic sauces, fillings, cookies, pies, and other bakery products.
- Relieve Pastry Cook 4 when necessary.
- Recognize quality standards in fresh vegetables, fruit, and bakery ingredients.
- Maintain a clean and sanitary environment, with knowledge of proper handling, storage, and sanitation procedures.
- Prepare baked products for Banquets, following specifications on Banquet Event Orders.
- Prepare all foods following hotel standard recipes. Special requests will be prepared under the direction of the Chef or Kitchen Supervisor.
- Breakdown buffets and kitchen lines, storing food and equipment properly at the end of each meal period.
- Work banquet food station as scheduled by the Chef or Kitchen Supervisor.
- Know the location and operation of all fire extinguishing equipment.
- Practice safe work habits at all times to avoid injury to self or others.
- Use Production Charts as specified by hotel standards.
- Be able to support any position in the kitchen that needs assistance.
- Adhere to all Health Department and Company regulations regarding food, storage, and safety standards.
- Operate and maintain cleanliness of all kitchen equipment.
- Maintain a “Clean As You Go” policy.
- Assist in storage and rotation of food items according to hotel procedures.
- Sign keys out and back in under supervision as needed.

Salary Range: $28.09/hr
