Pastry Cook 3 (Full-Time)
Highgate Hotels is seeking a highly motivated and experienced Pastry Cook 3 to join our team at the all-new 'Alohilani Resort Waikiki Beach in Honolulu, Hawaii. This premier resort, designed by the award-winning Rockwell Group, offers a fresh and welcoming atmosphere in the heart of Waikiki. The Pastry Cook 3 will be responsible for the preparation, production, and baking of a diverse range of pastries, breads, and desserts for the resort's various outlets.
Job Overview
As a Pastry Cook 3, you will play a crucial role in maintaining the highest standards of quality and customer service across our restaurants, room service, employee cafeteria, and banquet facilities. You will be responsible for:
- Preparing and producing a wide array of pastries, breads, and desserts, including Danish, croissants, breakfast breads, muffins, buns, rolls, fillings, bread puddings, puff pastry, basic sauces, and icings, following standardized recipes.
- Ensuring a clean, sanitary, and safe kitchen environment, minimizing waste, and maximizing cost-effectiveness.
- Assisting higher-level pastry cooks as needed.
- Maintaining thorough knowledge of menus and preparation requirements according to hotel standards.
- Preparing and displaying buffet items in accordance with hotel standards.
- Demonstrating proficiency in various cooking techniques, including baking, poaching, deep-frying, and par-cooking.
- Preparing doughs, yeast products, Danish, croissants, buns, rolls, basic sauces, fillings, cookies, pies, and other bakery products.
- Relieving Pastry Cook 4 when necessary.
- Recognizing quality standards in fresh vegetables, fruit, and bakery ingredients.
- Maintaining a clean and sanitary environment, adhering to proper handling, storage, and sanitation practices.
- Preparing banquet baked goods according to specifications.
- Preparing all foods using hotel-standard recipes, with special preparations performed under the guidance of the Chef or Kitchen Supervisor.
- Breaking down buffets and kitchen lines, properly storing food and equipment at the end of each meal period.
- Working the banquet food station as scheduled by the Chef or Kitchen Supervisor.
- Knowing the location and operation of all fire extinguishing equipment.
- Adhering to all safety protocols and company regulations.
- Utilizing Production Charts as per hotel standards.
- Supporting other kitchen positions as needed.
- Following all Health Department and Company regulations regarding food safety and storage.
- Operating and maintaining cleanliness of kitchen equipment.
- Implementing a "Clean As You Go" policy.
- Assisting in food storage and rotation according to hotel procedures.
- Signing out and signing in keys under supervision as required.

Compensation: $28.09/hr
