Sous Chef

Reports to: Executive Chef

An experienced and highly motivated culinarian is sought for the role of Sous Chef. This individual will lead by example, fostering a positive and productive team environment, and is expected to maintain the high standards set by Peter Merriman. The Sous Chef must be organized, clean, and professional, capable of running the kitchen in the Chef’s absence.

  • Maintain a clean and organized kitchen.
  • Ensure all recipes are followed precisely.
  • Conduct daily line checks to maintain quality and flavor in prep work.
  • Manage ordering procedures.
  • Inspect deliveries, verifying correct weights and quality of ingredients.
  • Implement immediate FIFO inventory control upon delivery receipt.
  • Maintain appropriate staffing levels before and during shifts.
  • Ensure proper temperature control for hot and cold food service.
  • Ensure all food leaving the kitchen meets standards for presentation, flavor, and timeliness, adhering to company guidelines.
  • Assign and supervise daily cleaning duties, verifying compliance with posted schedules.
  • Control food waste and optimize usage.
  • Handle all protein butchering.
  • Adhere to all company policies and regulations outlined in the employee handbook.
  • Attend and participate in daily pre-shift meetings, maintaining punctuality.
  • Foster a professional and supportive learning environment in the kitchens.
  • Oversee the closing procedures for the kitchen.

  • Ability to lift up to 50 lbs. as needed.
