Key Responsibilities:
- Sushi Mastery and Expertise: Execute traditional and contemporary sushi preparation techniques, with expert knife skills and precise ingredient selection. Create and present high-quality sushi dishes, ensuring consistency in flavor, presentation, and portioning.
- Menu Innovation and Creativity: Design and develop innovative sushi dishes that maintain authentic Japanese flavors, keeping the menu dynamic and exciting. Collaborate with management to update the menu based on seasonal ingredients and guest preferences.
- Collaboration with Mixologist: Work closely with the mixologist to develop a sake and wine program that complements the sushi menu, focusing on pairing Japanese beverages with the dishes. Collaborate in the creation of innovative, Japanese-inspired cocktails that enhance the guest experience, ensuring balance and harmony between food and beverage offerings.
- Leadership and Team Management: Lead, manage, and motivate the sushi team, fostering a positive and productive kitchen environment. Train junior sushi chefs and kitchen staff, ensuring all team members are well-versed in the restaurant’s standards and techniques.
- Customer Experience and Service: Provide an exceptional guest experience by engaging with diners, especially during omakase presentations. Tailor dishes to guest preferences and accommodate special requests to ensure an unforgettable dining experience.
- Attention to Detail and Quality Control: Oversee the precision of sushi preparation, ensuring that all dishes are aesthetically pleasing, perfectly portioned, and meet the restaurant’s high-quality standards. Monitor food presentation and ensure every dish adheres to the restaurant’s meticulous plating guidelines.
- Culinary Knowledge and Authenticity: Demonstrate a deep understanding of sushi preparation, Japanese dining customs, and fine dining protocols. Preserve traditional sushi methods while being open to incorporating modern techniques and ingredients.
- Operational Excellence and Problem Solving: Manage kitchen operations efficiently during busy service periods, ensuring smooth service. Address and resolve operational challenges and guest issues calmly and effectively.
- Budgeting and Cost Control: Maintain and monitor inventory, ensuring optimal ingredient use while controlling food costs. Collaborate with management on financial reporting, budgeting, and maintaining profitability without compromising quality.
- Food Safety and Health Regulations: Ensure compliance with food safety standards and health regulations, particularly when handling raw fish and other delicate ingredients. Oversee proper sanitation, storage, and preparation protocols in line with high-end restaurant standards.
- Vendor and Supply Chain Management: Communicate effectively with vendors to source the freshest, highest-quality ingredients, particularly for sushi-grade fish and specialty products. Maintain relationships with suppliers and manage inventory control to ensure the kitchen is stocked with necessary ingredients.
- Collaboration with Kitchen and Management: Work closely with the restaurant management, kitchen, and front-of-house teams to ensure efficient and seamless service. Provide input on service flow, guest preferences, and ways to enhance the dining experience.
Qualifications:
- 5+ years of experience as a sushi chef in a fine dining or high-end sushi restaurant.
- Mastery of sushi preparation techniques, knife skills, and an understanding of Japanese culinary traditions.
- Strong leadership and team management abilities.
- Excellent communication skills to liaise with staff, management, and guests.
- Experience with budgeting, financial reporting, and cost control.
- Availability for day shifts, evening shifts, weekends, and holidays.
