We are seeking an experienced and dedicated PM Line Cook to join our prestigious kitchen team at The Eagle’s Nest, an iconic, award-winning restaurant perched atop the Hyatt Regency Indianapolis. In this fast-paced, high-volume environment, you’ll play a crucial role in preparing exquisite dishes that exceed guest expectations.
Key Responsibilities:
- Food Preparation: Prepare and execute all menu items with precision, ensuring consistency and high quality in every dish.
- Team Collaboration: Work efficiently with fellow kitchen staff to maintain a smooth flow of service, ensuring food is prepared and plated in a timely manner.
- Sanitation & Safety: Maintain a clean, organized, and sanitary workspace in compliance with health department standards.
- Batch Cooking: Master the art of quantity and batch cooking for large groups while maintaining quality and presentation standards.
- Menu Knowledge: Learn and execute all menu items and specials, maintaining consistency and excellence in every dish.
- Food Handling: Follow proper food safety practices, including the handling, storage, and preparation of all ingredients.
- Customer Focus: Ensure the timely production of meals for guests, catering to any special dietary needs or requests.
- Stock & Inventory: Assist in monitoring inventory levels and rotating stock to ensure freshness and minimize waste.
- Health & Safety Compliance: Adhere to safety protocols, maintaining a safe environment for yourself and others in the kitchen.
Physical & Safety Requirements:
- Ability to stand and work on your feet for extended periods (up to 8 hours) in a fast-paced environment.
- Ability to lift and carry up to 50 pounds, including heavy kitchen equipment and food supplies.
- Comfortable working in varying temperatures, including cold storage and near hot kitchen appliances.
- Must follow all safety guidelines for handling knives, kitchen equipment, and hazardous materials.
- Must be able to perform repetitive tasks such as chopping, stirring, and lifting.
Qualifications:
- Minimum 1 year of culinary experience, preferably in a high-volume, upscale hotel or restaurant environment.
- Serve Safe Certified or equivalent preferred.
- Proficient in a variety of cooking techniques including grilling, roasting, sautéing, and frying.
- Strong multitasking abilities with comfort working in a fast-paced kitchen environment.
- High level of professionalism and a team-oriented mindset.
- Excellent communication and hospitality skills to ensure seamless coordination with front-of-house staff.
- Flexible schedule availability, including evenings, weekends, and holidays.
