The Restaurant Executive Chef is responsible for all aspects of the management of the restaurant kitchen operations. They provide direction and leadership for the Restaurant Sous Chef, Assistant Chef, and the Restaurant culinary team consistent with the MGM brand. They are responsible for leading the team to achieve the operational and financial goals of the venue; maintaining recipe, inventory, and supply management for the kitchen; overall cost controls; monitoring the performance, scheduling, and training of the staff; executing initiatives as implemented by property F&B leadership; maintaining the facilities in accordance with MGM Resorts service standards; and ensuring high customer satisfaction and an exceptional guest experience. All duties are performed in accordance with company policies and procedures.

The day-to-day responsibilities include:

  • Overseeing all daily kitchen operations, including budgets, staff scheduling, inventory, guest service standards, and menu planning to drive both short- and long-term profits.
  • Working with the General Manager on the restaurant’s business plan and representing the restaurant in meetings with higher management.
  • Implementing and upholding restaurant policies, pricing, training programs, menus, and other procedures for staff.
  • Ensuring the kitchen meets the highest health, sanitation, and cleanliness standards.
  • Making sure all restaurant staff complete required company training.
  • Handling HR responsibilities in the kitchen, including promoting teamwork, feedback, recognition, and job satisfaction.
  • Focusing on quality hiring, training, and succession planning, with an emphasis on diversity.
  • Ensuring compliance with company policies, legal requirements, and labor agreements.
  • Engaging with guests to ensure they have a great dining experience; responding to complaints and taking corrective actions as needed.
  • Working closely with the General Manager and service team to create a seamless dining experience between the kitchen and dining room.
  • Maintaining deep knowledge of all food and beverage offerings, menu items, and kitchen equipment.

The ideal candidate will possess:

  • Bachelor’s Degree or equivalent experience in the Food and Beverage industry.
  • 5 or more years of prior relevant experience.
  • Experience working with liquid nitrogen.
  • Experience with multiple outlets including Mexican, Italian, and Spanish Cuisine.
  • Ability to craft creative menu.
  • Previous experience in a high volume or luxury fine-dining restaurant.
  • Experience managing employees under a collective bargaining agreement.
  • Ability to handle multiple tasks at one time.

The typical pay range for this role is: $91,400.00 - $152,400.00. Please keep in mind that this range represents the pay range for all positions in the job grade within which this position falls. The actual salary offer will take into account a wide range of factors, including location.

This position is eligible to participate in the Company’s incentive plan. Eligible employees have the opportunity to participate in medical, dental, vision, and life insurance plans as well as 401(k) and time off plans. Specific program offerings vary by eligibility factors such as geographic location, employment status, and union membership.
