Line Cook - Commonwealth Lodging

Position Overview
Line cooks prepare a large portion of the food served in our kitchens. Working under the direction of a head chef or sous chef, each line cook is typically assigned a specific station, such as the grill, stove, or vegetable prep area. Responsibilities also include the proper presentation and storage of menu items according to standard recipes, health codes, and established procedures.
Qualifications, Education & Experience
- High School Diploma or General Education Degree (GED), or work equivalent
- 1-2 years of experience in food and beverage service is preferred
- Previous guest/customer relations training preferred
- Must be able to endure various physical movements throughout the work areas.
- Ability to communicate effectively with guests, management, and co-workers.
- Must be able to stand and maintain a consistent pace of mobility for up to 8 hours.
- Availability to work varied schedules, including nights, weekends, and holidays.
Responsibilities
- Strict adherence to State sanitation/Health regulations and Hotel requirements.
- Use of all chemicals in accordance with OSHA regulations and hotel requirements.
- Regular meetings with Head Cook/Sous Chef to review assignments, anticipated business levels, changes, and other job-related information.
- Opening Duties:
- Setting up workstation with necessary tools, equipment, and supplies.
- Inspection of cleanliness and working condition of all tools, equipment, and supplies.
- Reviewing production schedules and par levels.
- Establishing priorities for the day's tasks.
- Informing the Head Cook of any needed supply requisitions.
- Transporting supplies from the Storeroom and stocking designated areas.
- Organizing prep items from various areas to ensure readiness for service.
- Maintaining proper storage procedures as per Health Department and Hotel requirements.
- Closing Duties:
- Returning all food items to proper storage areas.
- Wrapping, covering, labeling, and dating stored food items.
- Straightening and organizing all storage areas.
- Cleaning and sanitizing food prep areas, reach-ins/walk-ins, and shelves.
- Returning clean utensils/equipment to designated locations.
- Turning off all unnecessary equipment.
- Assisting in handling emergencies to protect guests, associates, and building systems, acting swiftly and responsibly to restore normal operations.
- Adherence to all department, Commonwealth Lodging Management, and hotel policies, procedures, and brand standards.
