Job Summary

The Executive Chef is responsible for overseeing all kitchen operations, ensuring a safe and sanitary environment for staff. This role involves preparing or directing the preparation of meals according to corporate guidelines and programs. This is a fantastic opportunity for an energetic and entrepreneurial culinary professional.

Key Responsibilities

  • Plans and executes regular and modified menus in alignment with established guidelines.
  • Adheres to standardized recipes, portioning, and presentation standards.
  • Completes and utilizes daily production worksheets and waste log sheets.
  • Tastes completed meals to maintain food quality.
  • Trains kitchen staff on food preparation, safe handling, equipment operation, food safety, and sanitation, based on company and regulatory standards.
  • Establishes and maintains cleaning and maintenance schedules for equipment, storage, and work areas, ensuring staff adherence.
  • Maintains inventory of food and non-food supplies, ensuring availability while adhering to established guidelines.
  • Makes informed decisions regarding leftover food utilization, adhering to company guidelines.
  • Complies with federal, state, and local health and sanitation regulations, as demonstrated through local health department and third-party audits.
  • Adheres to all facility, department, and company safety policies and procedures, including incident reporting.
  • Participates in departmental meetings, staff development, and professional programs as required.

Preferred Qualifications

  • Associate's degree (A.S.) or equivalent experience
  • 5+ years of progressive culinary/kitchen management experience, commensurate with formal education or training.
  • Extensive catering experience is a plus.
  • Experience in high-volume, complex foodservice operations is highly desirable.
  • Experience in institutional and batch cooking is a plus.
  • Hands-on chef experience is essential.
  • Deep understanding of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation.
  • Proficiency with computers, including Microsoft Office (Word, Excel, PowerPoint), Outlook, email, and the internet.
  • Willingness to participate in client satisfaction programs/activities.
  • ServSafe certification is highly desirable.
