Job Description

The Branded Concepts Chef at the Carolina Hurricanes/Lenovo Center will be responsible for the effective food production of branded concept outlets. These outlets consist of food and beverage options within the Lenovo Center that are contracted partnerships with regional and national restaurants. The role involves offering courteous customer service, prompt delivery, and accountability of product in a manner that exceeds expectations while adhering to specific recipes.

The Branded Concepts Chef is responsible for leading branded concept production, ensuring maximum guest satisfaction through planning, organizing, directing, and controlling all aspects of food production. This includes:

  • Exhibiting culinary talents by personally performing tasks while assisting in leading the staff.
  • Collaborating with branded concept staff to ensure all menu items are produced to specifications.
  • Maintaining work areas, coolers, and dry storage in a clean and orderly fashion.
  • Ensuring the service of foodstuff by staff, maintenance of quality, taste, temperature, and general physical appearance of service lines.
  • Adhering to and maintaining local health department standards and OSHA rules and regulations.
  • Ensuring kitchen safety and sanitation conforms to all regulatory and governmental standards.
  • Achieving assigned cost goals and labor budgets.
  • Interviewing, hiring, and training staff.
  • Training kitchen staff in food preparation, safe handling, operation of equipment, food safety, and sanitation.
  • Maintaining employee schedules and payroll.

Minimum Education And Experience:

Qualified candidates must have a culinary degree from a recognized institution or its equivalent with 3-5 years of experience in a high volume banquet facility, fine dining, convention center, or sports venue experience. Experience maintaining inventories and company recipes is required. Candidates should possess outstanding verbal and written communication skills, strong Microsoft Office experience, and the ability to work a flexible schedule, including 60 or more hours per week. Experience with concessions and commissary general operations is preferred.

Ideal candidates will demonstrate fair and firm management abilities with high influencing skills, strong administration skills, and a creative and innovative approach. A hands-on approach to all operational aspects, excellent communication skills, and computer skills are essential. Training and coaching skills are ideal, along with self-motivation and strong initiative. Candidates must pass a criminal background check.
