Reporting to the Executive Chef or the Executive Sous Chef, the Banquet Chef is responsible for the following:

  • Direct supervision of day-to-day operation of all banquet functions.
  • Understanding the concepts and having the experience of interacting within a professional kitchen.
  • Following instructions and understanding the philosophy of the Executive Chef and carrying out those ideas, stressing them to associates.
  • Dealing with other individuals (cooks), on a one-to-one basis, instructing and guiding them in their jobs.
  • Ensuring quality eye appeal, taste, and monitoring them daily.
  • Controlling cleanliness and sanitation throughout the kitchen, walk-ins, and ensuring proper rotation of foods.
  • Implementing new menus and ensuring their proper implementation.
  • Maintaining accurate administrative records on a timely basis and completing projects on time.
  • Ability to work in an organized fashion and train and develop future culinary staff.
  • Daily walk-throughs of all kitchens and walk-ins for proper rotation of food and sanitation.
  • Daily routine checks of mise en place and quality of food products.
  • Organizing a proper recipe file and keeping it updated.

Skills Required extracted by

  • Minimum 8 years of experience in a luxury hotel or restaurant with high volume catering.
  • Ability to give direction and manage banquet cooks.
  • Knowledge of basic culinary skills such as butchering, sauces, soups, cooking meat, fish, and vegetables.
  • Experience in supervising and training culinary staff.
  • Ability to work in an organized and proactive manner.
