Job Description

Sodexo is seeking an Executive Chef 3 for Brethren Village located in Lititz, Pennsylvania. Brethren Village is an upscale continuing care retirement community and a Sodexo-certified showcase account. This position oversees culinary operations of the main kitchen, serving the skilled care and personal care dining rooms and catering, as well as the Village Center Bistro. Will report to the Executive Chef 4 and manage approximately 40 kitchen employees. Typical shifts will vary between opening and closing with some weekends.

The successful candidate will:

  • Implement and standardize all culinary systems and procedures for Seniors: Catering, Retail menus, LTO’s, STG, Mindful, garnishing, panning charts, production, puree standardization, FMS sheets, inventory control, HACCP, cleaning schedules, staffing plans, presentation and quality of food, kitchen cleanliness, safety, etc. Sodexo standards will be the benchmark.
  • Monitor, conduct audits, and create action plans based on audit findings.
  • Work with vendors on procurement items and be responsible for purchasing manager and purchasing financial audits.
  • Improve and standardize catering services, creating menus based on client needs.
  • Implement innovative and fresh ideas in retail, catering, and resident dining.
  • Create interpersonal relationships with residents.

  • Excellent leadership and communication skills with the ability to maintain the highest of standards and implement company policies.
  • A strong culinary background, ideally in an upscale restaurant/retail/country club environment.
  • Prior food service experience in a healthcare environment is a plus.
  • Experience leading and engaging a culinary team, with exceptional human resource and supervisory/management skillset.
  • Menu planning experience and a strong understanding of current culinary trends.
  • Proven ability to effectively communicate to multiple audiences and develop strong relationships with customers.
  • The ability to multitask and proven effectiveness in a high-standards-driven environment.
  • A strong understanding of forecasting, food cost management, purchasing, inventory, and labor management concepts.
  • The ability to successfully lead, develop, and train a team.
  • Creative and effective problem-solving and project management skills.
  • Proficient computer skills as well as exceptional organizational and customer service skills.
  • Serv-Safe certified with working knowledge of HACCP and experience with Health and Safety audits.

Basic Education Requirement - Bachelor’s Degree or equivalent experience

Basic Management Experience - 3 years

Basic Functional Experience - 3 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
