Job Description

We are seeking a dynamically innovative Executive Chef for The Publisher Hotel, a newly opened lifestyle hotel in Downtown Fredericksburg. This role also oversees Five Chophouse & Bar, the city’s newest upscale steakhouse.

The Executive Chef is responsible for planning, directing, and managing kitchen operations, including procurement, production, and presentation, to deliver exceptional culinary experiences. The role emphasizes safety, quality, profitability, and adherence to all standards and regulations while fostering a collaborative and innovative kitchen environment.

Key Responsibilities:

  • Operational Excellence: Lead daily kitchen operations, ensuring consistent quality and adherence to company SOPs. Develop and execute menus that reflect current culinary trends while meeting budget objectives. Oversee food preparation, portion control, and presentation standards. Maintain a safe, sanitary work environment in compliance with health and safety regulations.
  • Financial Management: Manage kitchen budgets, including food and labor costs. Continuously analyze and forecast expenses to optimize profitability. Recommend and implement procedural changes to improve efficiencies.
  • Team Leadership: Recruit, train, develop, and motivate kitchen staff, fostering a positive and safe working environment. Conduct performance reviews, provide constructive feedback, and resolve personnel issues. Promote open communication and a team-focused culture.
  • Guest Satisfaction: Collaborate with catering and banquet teams to ensure seamless event execution. Regularly interact with guests and incorporate feedback into operational improvements. Maintain high standards of professionalism and guest service.
  • Maintenance & Compliance: Monitor the condition of kitchen equipment and coordinate maintenance as needed. Ensure all kitchen areas meet or exceed federal, state, corporate, and franchise standards. Manage inventory and oversee proper storage of all supplies.

Qualifications & Requirements:

  • Education: High School diploma or equivalent required; culinary certification preferred.
  • Experience: Familiarity with Marriott, Hilton, IHG, Wyndham, or Hyatt standards is a plus.
  • Ability to work in extreme temperature environments (kitchens, freezers). Must be physically able to lift and carry up to 50 pounds and perform repetitive tasks.
