The Omni Homestead Resort & Spa is seeking a skilled pastry chef to provide properly cooked and presented food in any outlet, commissary, or banquet production.
Responsibilities include:
- Assuming responsibility of production in the absence of the Executive Pastry Chef, Assistant Pastry Chef, and Pastry Supervisor.
- Assisting with bakery as needed while having vast knowledge and ability to assume complete responsibility as needed.
- Preparing all food items according to standard recipes and/or as specified on guest checks to ensure consistency of product.
- Visually inspecting, selecting, and using only food items ideal for cooking in preparation of all menu items.
- Checking and controlling the proper storage of products, monitoring age and condition of all food items to rotate and maintain the highest quality.
- Keeping all refrigeration equipment, storage, and working areas clean and clutter-free, complying with health department regulations.
- Preparing daily requisitions for supplies and food items for production.
- Reading and employing math skills to follow recipes.
- Ensuring all equipment is clean and in working condition.
- Maintaining the highest quality and appearance of all foods sent from the kitchen and ensuring that plates/buffet presentations are clean and appetizing.
- Maintaining proper pars of production and mise en place, labeling and dating all foods.
- Being solely responsible for maintaining a clean work station, ensuring all work areas are properly cleaned at the end of the shift and at the end of the evening.
- Recognizing deficiencies with dishes and making corrections.
- Measuring and mixing ingredients to form dough or batter, shaping dough for cookies, pies, and pastries.
- Regulating oven temperatures for cooking.
- Preparing and cooking ingredients for pie fillings, puddings, custards, and other desserts.
- Mixing ingredients for icing and decorating cakes and pastries.
Tools and equipment include cooking utensils and equipment, pots, pans, dishware, silverware, glassware, sheeter, mixer, digital and manual scales, and knives.
The working environment is inside the hotel, in restaurant and kitchen areas, with exposure to humidity, steam, and extreme temperatures, as well as exposure to food and beverage hazardous cleaning chemicals.
