Executive Sous Chef at Gravity Haus

At Gravity Haus, we're seeking a highly motivated and experienced Executive Sous Chef to lead our culinary team. You'll be a key player in driving exceptional guest experiences and ensuring the smooth operation of our kitchen. You must embody our "haus"pitality, leading by example and empowering your team to achieve excellence.

  • Proven Experience: You possess substantial experience as a culinary leader in a luxury hotel or high-volume, upscale restaurant setting. A culinary degree or equivalent industry experience is required.
  • Supervisory Expertise: Four years of progressive culinary experience, including supervisory or management of employees in various commercial/professional kitchens.
  • Multi-Station Competency: The ability to work all stations within the kitchen at a high level of competency.
  • Technical Proficiency: Competency with computer programs such as Microsoft Office, Google applications, and Slack is necessary. Excellent written and spoken English skills are essential; bilingual Spanish proficiency is a plus.
  • Culinary Acumen: Demonstrate a deep understanding of ingredients and current culinary trends.
  • Exceptional Management: Proven ability to manage on-the-fly requests with ease and composure, creating a positive and productive work environment. You must be calm under pressure, able to prioritize tasks, problem-solve, and meet deadlines. Strong leadership skills are crucial.
  • Operational Knowledge: Working knowledge of inventory management, order guides, estimating needs, placing orders, and receiving/checking deliveries is essential.
  • Commitment to Excellence: A "Do Whatever It Takes Attitude" and a commitment to guest satisfaction. This should be demonstrated through a hands-on, lead-by-example management style. You must uphold the highest standards in food safety.
  • Financial Awareness: You'll review sales, costs, and labor information to ensure adherence to budgets. Strong financial management and cost control expertise is vital.
  • Team Player: Working side-by-side with your team, fostering engagement, collaboration, and a shared sense of pride.

What You'll Do:

  • Lead the entire culinary team, directing daily operations in all kitchen areas (production, prep, special events, purchasing, and receiving), providing support to the Executive Chef.
  • Coach, counsel, and provide feedback to team members to enhance their performance.
  • Cross-train team members to improve their station-specific knowledge.
  • Utilize culinary experience to drive the restaurant toward financial success through effective management of labor costs, food costs, and other controllable expenses.
  • Adhere to and execute the Gravity Haus Culinary operations system.
  • Ensure proper food safety procedures are followed, including completing temperature logs and ensuring proper product rotation.
  • Complete all other duties and responsibilities as assigned.

Education and Experience:

  • Minimum of 4 years of progressive culinary experience.
  • Minimum of 2 years of experience in culinary leadership preferred.

Physical Requirements:

  • Ability to stand for extended periods.
  • Ability to lift up to 50 lbs.

Salary: $80,000-$90,000 per year, depending on experience.
